This is an interesting, yet wildly delicious hummus recipe. The cranberries give it a bitter hit, while the apples sweeten it up and balance it out. Pair it with cheese and crackers, and you’ll be on top of the taste bud world!
If you’re not a cranberry connoisseur or they’re just a bit too bitter for you, either change up the measurements and add more apples and/or add a little extra brown sugar, honey, or your sweetener of choice. Play around and see what you come up with! Enjoy!
Original RecipeÂ
Ingredients:
- 1 (15 oz.) can of chickpeas
- 1 small apple, about 1.5 cups
- 1 cup cranberries, made into compote
- 2 tbsp olive oil
- 1 tbsp tahini
- 1 tsp vanilla extract
- 1/4 tsp lemon juice
- 1 tbsp brown sugar
- Pinch of Himalayan pink salt
Directions:
1. Measure out the cranberries, and pour them into a pot with about 1 tbsp of water. Heat them on the stove over medium heat until they begin to pop, and form a compote.
2. Let cool for a few minutes once the compote has formed.
3. Place all ingredients into the food processor and process until desired consistency is reached. This usually takes about 5-7 minutes depending on the power of your food processor. Stop and mix the hummus at least twice, so it all gets off the sides and gets alllll up in there.
4. Pair with crackers and cheese, spread it in a sandwich or grilled cheese, or eat it with a spoon. Whatever your heart desires, ENJOY.
