BANANA NUT WAFFLES

The combination of bananas and nuts are an absolute classic. It’s also always reminded me of Thanksgiving time… it’s just got one of those flavor feels. This recipe is definitely one of my favorites so far. The flavors worked so well and it really embodied the banana-nut combo.

I used salted almonds and it added a little kick. I really liked it, but for a slightly more subtle flavor I would recommend unsalted almonds. Depending on how much you like almonds and walnuts, you can also play with the measurements. I erred on the safe side and used less, so I could load it up with toppings.

Ingredients:

  • 1 cup buttermilk waffle mix
  • 1 cup unsweetened vanilla almond milk
  • 1 tbsp vegetable oil
  • 2 bananas (medium-large)
    • One for the mix (mashed), one for the toppings (sliced)
  • About 5 crushed almonds
  • Handful of crushed walnuts
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 tsp brown sugar

My toppings of choice:
Siggi’s vanilla yogurt
Almond butter
Caramelized bananas
Almonds & walnuts

Directions:

  1. Combine the first three ingredients in a medium bowl. I should note that the almond milk and vegetable oil are called for on the box. Depending on what type of mix you have, it might require an egg or simply just water. Make sure to take a look at the box.
  2. Mix in the scoop of collagen and make sure it doesn’t clump.
  3. Mix in the remaining ingredients. I smashed the banana in the mix, but it might be easier to do it before putting it in.
  4. Prior to putting the mix in the waffle maker, melt butter (or ghee) and 1 tsp of brown sugar in a pan. Then slice the second banana and put it in the pan.
  5. Let these caramelize for about 5-10 minutes on medium-low heat while your waffle is cooking.
  6. Once waffle is done, top it with your caramelized banana and whatever toppings your heart desires!

CARAMEL APPLE WAFFLES

Remember how every time you went apple picking in the fall you either got a caramel apple, apple cider donuts, or a combination of both? (Obviously I got both). Well caramel apples were, and still are, my favorite fall treat – hands down. I’ll eat any kind – plain caramel, covered in nuts, pretzels, jimmies – you name it. So, as I’m planning out some of my fall waffle recipes, this beauty came to mind. Eating this truly brought me back to apple picking trips with my family. As corny as it sounds, every bite brought back a good memory. I hope you all enjoy this masterpiece of a waffle as much as I did!

Ingredients:

  • 1 cup buttermilk waffle mix
  • 1 cup vanilla almond milk
  • 1 tbsp vegetable oil
  • 1/2 a honeycrisp apple (finely chopped)
  • 1 tbsp “flavorganics” caramel syrup
  • 2 tbsp(ish) crushed salted peanuts
  • 1/2 tbsp chia seeds

Mix together first 3 ingredients in a medium bowl. Once smooth, mix in remaining ingredients and pour it into your waffle maker!

My toppings of choice:

  • Apple slices
  • Crushed peanuts
  • Smucker’s salted caramel topping

APPLE PIE WAFFLES

Apple pie not only reminds me of fall, but also of Thanksgiving. It’s always been my family’s go-to dessert for holidays, and I definitely can’t complain! So, with five apples sitting on my table, this recipe was calling my name.

Ingredients:

  • 1 cup buttermilk waffles mix
  • 1 cup water*
  • 1 tbsp vegetable oil
  • 1/2 finely chopped apple
  • 1/2 tsp vanilla extract
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp brown sugar
  • A squirt of honey

Mix the first 3 ingredients together in a medium bowl. Once smooth, mix in remaining ingredients and pour it into your waffle maker!

My toppings of choice:
Apple slices
Justin’s honey almond butter
Paleonola apple pie granola

*I usually use almond milk in my waffle recipes, but we ran out so I had to compromise. Either will work and it still tasted delicious!

SPICED PEAR WAFFLES

The pear used for this waffle was a farmer’s market purchase and it was at the height of it’s perfectness. While making this recipe, I honestly just threw together a bunch of spices that usually play off each other really well… and it worked out!

Ingredients:

  • ½ cup Simple Mills almond flour mix*
  • 1 egg
  • 2 tbsp almond coconut milk
  • 2 tsp vegetable oil
  • 1 pear (mashed)
  • ¼ tsp vanilla extract
  • ¼ tsp cinnamon
  • ¼ tsp (shy) nutmeg
  • ⅛ tsp ground ginger
  • ½ tsp brown sugar
  • ¼ tsp (shy) ground cardamom

Mix together first 4 ingredients in a medium bowl. Once smooth, mix in remaining ingredients and pour it into your waffle maker!

My toppings of choice:

  • Pear
  • Real Vermont maple syrup
  • Oat My Goodness starshine granola

*I use Simple Mills waffle mix for this particular recipe (and a few others), but any waffle mix will work just fine. Just be aware that the first 4 ingredients are called for on the box. So keep an eye out if you’re using different mix!

PEACHES ‘N CREAM WAFFLES

It’s still farmer’s market season, which means perfectly fresh fruit and veggies. Let me tell you – the peaches, TO DIE FOR! They were perfectly juicy and ripe, filling this waffle with all its sweet glory.

Ingredients:

  • ½ cup Simple Mills almond flour mix
  • 1 egg
  • 2 tablespoons almond coconut milk
  • 2 teaspoons vegetable oil
  • 1 ripe peach
  • ¼ teaspoon cinnamon
  • ½ teaspoon honey

Mix together first 4 ingredients in a medium bowl. Once smooth, mix in remaining ingredients and pour it into your waffle maker!

These were my toppings of choice:

  • Peach slices
  • Siggi’s Dairy peach yogurt
  • Cascadian Farm french vanilla almond granola
  • Real Vermont maple syrup

MAPLE WALNUT WAFFLES

Maple flavored anything has me drooling like a dog. Seriously, these waffles were delicious. If you’re more on the adventurous side, you can double the serving of maple extract without it being too over the top. Waffle on, friends!

Ingredients:

  • 1 cup buttermilk waffle mix
  • 1 cup vanilla almond milk
  • 1 tbsp vegetable oil
  • 1 tsp maple extract
  • 1 tsp brown sugar
  • Handful of crushed walnuts

Mix together first 3 ingredients in a medium bowl. Once smooth, mix in remaining ingredients and pour it into your waffle maker!

My toppings of choice:

  • Butter
  • Pure Vermont maple syrup
  • Organic sprouted walnuts

CHICKEN & WAFFLES

This recipe is definitely customizable, depending on how you want to cook your chicken, or what you want to add to your waffles. But, I highly recommend giving the saucy syrup mixture a try. I honestly just pulled out the condiments I love on both chicken and waffles, and combined them. It’s magical.

Ingredients:
Waffle:
• 1 cup buttermilk pancake/waffle mix
• 1 cup cold water
• 1 tbsp olive oil
• 1 tbsp chia seeds

1. Mix the above ingredients in a medium bowl (the water and oil are what’s called for on my particular box of waffle mix)
2. Pour into your waffle maker and cook until golden brown and delicious

Chicken:
• 1 tenderloin (per waffle)

1. Coat the tenderloin(s) in a mixture of flour, corn starch, bread crumbs, milk, and one egg
2. Season it in salt, pepper, garlic powder, onion powder, and paprika
3. Sauté it in a generous amount of olive oil until cooked through

Saucy Syrup:
• 2 – 2.5 parts maple syrup
• 1 part soy sauce
• 1 part Carolina sweet bbq sauce

TOASTED COCONUT WAFFLES

I found toasted coconut flavored coconut almond milk (say that five times fast) in the grocery store and obviously I had to give it a try. Despite being great for oats and cereal, it made the PERFECT addition to this waffle, really giving it that extra kick it needed.

Ingredients:

Mix the first 3 ingredients together in a medium bowl. Once smooth, mix in remaining ingredients and pour it into your waffle maker!

My toppings of choice:
Banana
Vanilla yogurt
Coconut flakes
Organic sprouted walnuts

SWEET POTATO WAFFLES

Sweet potatoes are the perfect combination of sweet and savory – and you can flavor them how you want! I chose to sweeten mine up with this recipe, giving it the classic flavor combo.

Ingredients:

  • 1 cup buttermilk mix
  • 1 cup water
  • 1 tbsp vegetable oil
  • 1/2 medium sweet potato, boiled and mashed
  • 1/2 tsp cinnamon
  • 1/2 tbsp brown sugar
  • 1/2 tsp maple extract
  • 1 tsp maca powder

My toppings of choice:
Sweet potato mash
Cacao nibs
Local honey
Pure Vermont maple syrup

Directions:

  1. Boil water. Rinse and dry the sweet potato, then cut into chunks. Place in boiling water, salt to taste, and wait until soft when pierced with a fork. Drain and mash.
    • I left the skins on for some extra nutrition – you can do it either way!
  2. Mix together the waffle mix, water and vegetable oil in a medium bowl until smooth.
  3. Add cinnamon, brown sugar, maple extract, maca powder and collagen – mix until smooth.
    • You may want to do these a little at a time so it doesn’t chunk.
  4. Add in as much sweet potato mash as you see fit!
  5. Pour that baby in your waffle maker, wait until it’s done and dress it up all nice! ENJOY!

PUMPKIN SPICE WAFFLES

Of course, the most “basic” waffle of them all. But, good news for us, that doesn’t change how delicious it is. These babies came out bright orange and tasted out of this world!

Ingredients:

  • 1 cup buttermilk waffle mix
  • 1 cup vanilla almond milk
  • 1 tbsp vegetable oil
  • 4 tsp (heaping) pumpkin purée
  • 1 tsp pumpkin pie spice
  • 1/2 tsp maca powder

Mix together first 3 ingredients in a medium bowl. Once smooth, mix in remaining ingredients and pour it into your waffle maker!

My toppings of choice:

  • Siggi’s pumpkin spice yogurt
  • Oat My Goodness vintage granola

CHOCOLATE PUMPKIN WAFFLES

The recipe below includes the measurements I used, but I’ve got a few notes to share first. I only used 1 tablespoon of pumpkin puree because I hadn’t really cooked with it before. It still added good flavor, but I definitely could have used way more. That being said, if you love pumpkin – LOAD IT UP! Same goes for the pumpkin pie spice; I didn’t measure it, I just dumped it in. So keep shakin’ that spice jar until your heart is content!

Ingredients:

  • 1 cup Kodiak Cakes dark chocolate mix
  • 1 cup almond milk
  • 1 tbsp vegetable oil
  • 1 tbsp (heaping) pure pumpkin
  • Lots of pumpkin pie spice
  • 1 tsp maca powder
  • 1 tbsp chia seeds
  • ½ tsp vanilla extract

Mix together first 3 ingredients in a medium bowl. Once smooth, mix in remaining ingredients and pour it into your waffle maker!

My toppings of choice:

  • Real Vermont maple syrup
  • Soom chocolate tahini
  • Oat My Goodness vintage granola

MATCHA WAFFLES

With all this matcha hype, and the holiday season, I decided to make some festive waffles! I was a little apprehensive at first putting matcha into a waffle, but it came out really well! It wasn’t the flavor I expected, but I was most certainly pleasantly surprised. Give it a shot!

Ingredients:

  • 1 cup buttermilk waffle mix
  • 1 cup vanilla almond milk
  • 1 tbsp vegetable oil
  • 2 tsp matcha powder
  • 1 tsp maca powder
  • 1 tsp vanilla extract

Mix the first 3 ingredients together in a medium bowl. Once smooth, mix in remaining ingredients and pour it into your waffle maker!

My toppings of choice:
Raspberries
Pomegranate seeds
Organic coconut flakes

COFFEE CAKE WAFFLES

I’ve always loved coffee cake – it’s simple yet totally delicious. So I figured, why not make it a waffle?! In the process of thinking up the recipe, I seriously impressed myself with the idea to add actual coffee. It was delicious and the waffle was even more energizing. Making this recipe in the future, I plan to play around with the amount of coffee I put in, SO GET WILD!

Ingredients:

  • ½ cup Simple Mills almond flour mix
  • 1 egg
  • 2 tsp vegetable oil
  • 1 tbsp almond coconut milk
  • 1 tbsp caramel cold brew concentrate (I used Chameleon)
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon
  • 1 tsp brown sugar
  • ½ tbsp chia seeds

Mix together first 5 ingredients in a medium bowl. Once smooth, mix in remaining ingredients and pour it into your waffle maker!

My toppings of choice:

  • Unsalted butter
  • Brown sugar
  • Oat My Goodness vintage granola
  • Honey

VANILLA CHOCOLATE SWIRL WAFFLES

When I was younger, my dad used to take us to Dairy Queen in town and we would always order a “half and half in a cone.” Simple as could be; vanilla and chocolate soft serve swirled into beautiful perfection. So in honor of this tradition and memory, I decided a waffle version was just what I needed. I used two different waffle mixes for this recipe. If you only have a buttermilk mix, you can simply make two separate bowls, one flavored with cacao powder (or your favorite chocolate flavoring).

Ingredients:

Vanilla:

  • 1/2 cup buttermilk waffle mix
  • 1/2 cup cold water
  • 1/2 tbsp vegetable oil
  • 1 tsp vanilla extract

Chocolate:

  • 1/2 cup (Kodiak Cakes) dark chocolate waffle mix
  • 1/2 cup cold water
  • 1/2 tbsp vegetable oil
  • 1 shy tbsp chia seeds

Directions:

  1. Mix ingredients together in two separate bowls, keeping the vanilla and chocolate separate.
  2. When waffle maker is heated an ready, take both bowls and pour in at the same time.
    • Make sure to overlap (swirl) if you want a good mix of both flavors!
  3. Top with anything you’d like and ENJOY!
