Avocado Alfredo Sauce

I’ve had my food processor for about a month and it has become my favorite kitchen appliance. I started by making hummus because I figured that was easiest. But, I have since realized that this baby can make anything! I started coming up with a list of recipe ideas for my food processor, and oh man did I get myself excited.

After total success with this recipe, I discovered how easy it is to make homemade sauces. As I’m learning how to interpret ingredient labels in the grocery store, I’ve been more concerned as to what is actually going into my body. By making sauces, dressings, hummus, etc. at home, those unwanted ingredients can be eliminated.

This sauce has a kick to it. The combination of garlic, Parmesan cheese, and lime juice really amps the flavor up! It was a hit with every member of my household – I let them stick their fingers in the food processor after I poured all the sauce out 😉 Although this is meant as a sauce, it can be used as a dip for veggies if you’re feeling fancy! So get to processing and enjoy this beautiful, green goodness!

 

Original Recipe

Ingredients:

  • 1 avocado
  • 2 oz. cream cheese
  • 1 clove of garlic
  • 1/2 cup parmesan cheese
  • 2 tbsp unsalted butter
  • 3/4 cup heavy whipping cream
  • 1/2 lime squeezed for juice
    • about 1-2 tbsp
  • Salt and pepper, to taste

Directions:

1. Cut and peel the avocado and place it in the food processor. Then add in all other dry ingredients.

2. Squeeze the lime juice into the food processor, followed by the heavy cream (your wet ingredients).

3. Finally, add the desired amount of salt and pepper. Place lid on food processor.

4. Process for about 45-60 seconds. Give it a good stir and a taste. Process for an additional 30 seconds, or until desired consistency.

5. Place a big dollop on your dinner and enjoy!

I topped my pasta and veggies with it. This sauce will also work nice on zoodles or even in a stir fry. Get creative and see what you can pair it with!
